Butternut Squash and Sweet Potato Soup! SW Friendly

Welcome back beauties!

I have had lots and lots of feedback about my “food shop” that I popped up on snapchat last night lots of you guys said you like the convenience factor without sacrificing the quality and freshness. I know sometimes when you opt for convenience you are getting salty preservatives – but it can be done without!

I felt super super motivated after my class last week, I never used to stay in class until this most recent round of Slimming World and I do find it makes a huge difference. I used to just run in and run out but as my weighin nears each week I can actually feel myself looking forward to taking that hour out for me no rushing or running – just time to sit there reflect on the past week, think about how I can tackle the week ahead and listen to everyone else’s stories! I don’t know anyone that doesn’t get motivated by hearing other peoples success stories and there are plenty in my class! I also find this is the time you hear about a new product or a different way to cook something etc and I cant believe the value I have on the classes this time around – they are a lifeline!

So down to business! I wanted to make a soup last night with the changing weather, something that would warm me right up and I’m not going to lie the last thing I wanted to do last night was get stuck into cooking after class but I forced myself because I knew I would be delighted that I had today. So this soup takes very little time or preparation you will be glad to know!

Ingredients:

  • Butternut Squash (I used a bag of frozen butternut squash from Tesco)
  • 3 sweet potatoes (smallish in size)
  • 1/2 onion
  • 1 clove of garlic
  • Fry light
  • Chicken stock cube
  • Ground black pepper
  • chilli flakes or fresh chilli

Method

  • Spray the bottom of put with fry light, add onion and garlic and sauté,
  • Add butternut squash, sweet potato and 2 pints of stock,
  • Add a pinch of chilli flakes and allow to simmer
  • Blitz and enjoy!

This is one of my favorite soups to date and tastes super creamy without the calories! My top tip here is to make a big batch and keep some in the freezer it can be ready it 10 mins if you defrost in the microwave and because its syn free you can have it whenever you want!
